Is there a way to track visitors to the App Store? I'd like to find out how many people are viewing my app's App Store page. Thanks.

No way to see how many App store visitors you get for your App unless they buy/download your App (or leave a review), but check out the iTunes Connect App. It is one of the best ways to track everything you can track about your Apps.
The [iTunes Connect] app goes into good detail, allowing you to break down sales by
day, week, month and six months. Complete with graphs that display
sold units and updates, you can also see how your apps are doing in
all the markets they are being sold in.

Unless they post a comment, you can't know who is visiting your page.

There are third party services too that give in-deapth analytics. A few to name are:

I am offering a subscription to users right when they sign up to my iOS app. If the user does not purchase the subscription offer at sign up, I want to give them the premium version of the app for 7 days. Once the 7 days past I want the user to have to purchase a subscription to continue to use the app.
I do not want to do just a basic counter/timer in the app because users' can just delete and reinstall the app to get full access once their time is up.
What is a possible way of accomplishing this?
Apple provides a way to do that. but it supports iOS 11.0+ It's called DeviceCheck
From the docs:
Access per-device, per-developer data that your associated server can
use in its business logic.
You can set two bits data per device and keep in mind that it is dev's responsibility for keeping track of whether a user is entitled to redeem any offer that you provide.

I'm wondering if anyone knows of a way to determine the number of apps in an iTunes app store category?
In particular, I'm interested in the games categories since there are several of them and I'm only allowed to be in 2. Need to pick my choices wisely...
Seems like there might be a website somewhere that has this data?
You can find this data manually in iTunes on your mac. iTunes > App Store > Games, then to get to a specific category, scroll down, and on the lower right will be 'More Games'. Choose a category from here, e.g. 'Strategy'. Then scroll down till you see 'All Strategy iPhone Apps'. Look right and you'll see 1-24 of 4125.
I haven't looked myself, but you may also be able to retrieve this data through the iTunes App Store Affiliate API.

My app has been on the App Store for 48 hours and I have had several people download and give a rating and review. For some reason the ratings and review are not showing up in the App Store. I was wondering if it's something I did on my end and how do I fix this?
You cant do anything to prevent the reviews or rating to show up in the app store. If it was possible, a lot of scam apps would have done that. So just sit back and relax. Following information may be helpful.
You need minimum 5 ratings to display an average rating in appstore
Each appstore handles reviews/ratings separately. That means at least five users from the same appstore (Eg: US) should rate it before the average rating shows up.
App reviews and ratings are not updated in real time.
Go to iTunes Connect > Manage Applications > select your app > select current version > go to Customer Reviews and you will se a dropdown with all the countries where your app is available.
Selecting a country should show you all reviews in that country even if they have not appeared on the AppStore itself yet.

There are a lot of useful apps already available in the app store and I don't want to reinvent them just because i think they'd be useful to be part of my app. So I'm wondering whether it is possible to sell them from within my app, whereby the user can purchase them without leaving the comfy confines of my app. Any idea about this? Or will the user always have to head over to the App Store to get their hands on them?
On a side note, it would be nice if i could get some commission for selling them within my app (can't imagine Apple would allow that though).
No this is not possible. Best you can do is redirect the user to the app store app from within your app to the app the user wants more info on.

Does apple allow that? I remember a $30K contest that a team from MIT ended up winning. I think it had to do with locating red balloons on a GPS that were scattered all over the world. Something like that.
From the App Store Review Guidelines:
Contests, sweepstakes, lotteries, and raffles
1 Sweepstakes and contests must be sponsored by the developer/company of
the app
2 Official rules for sweepstakes and contests, must be presented in the
app and make it clear that Apple is
not a sponsor or involved in the
activity in any manner
3 It must be permissible by law for the developer to run a lottery app,
and a lottery app must have all of the
following characteristics:
consideration, chance, and a prize
4 Apps that allow a user to directly purchase a lottery or raffle
ticket in the app will be rejected
I'm not sure why they wouldn't, but if you offer anything of value on your "game" I'm almost 100% sure that hackers will find a way to the top =/.
As long as the game continues to function after the competition period you should be fine
