I have a column known as "Gender" that has values 1 = Male and 2 = Female.
Each column has a corresponding value next to it, as follows:
Gender Value
1 500
2 300
1 300
2 400
and so on.
I want to plot this (with each individual value) on a tableau sheet but if I put either of these measures it just SUMs it up by default. Is there a way to plot it like a normal graph with say one attribute as row and the other as column?
Drag Gender to the dimensions section of the data pane (left margin). You might also want to right click on it and edit the aliases.
If you don't want aggregate values in your viz, you can turn that off with the Analysis menu

Not that difficult. I recreated a data like yours,
Follow these steps
Add slide on rows
Add number of records in text on marks card
Add table calculation on this field -> percent of total. The view will look like this
Notice a small triangle in 'no of records' field. That indicates that it is table calculation
Add number of records field once again to text. (Tip: Double click the field number of records to add it to view directly)
Reorder as you like

I have multiple column of survey answers from excel in tableau with the answers being 1,2,3,4,5. I want to show across the average for each column but in singular bar graph. For example row 1 would have a bar chart showing the average for that excel column, row 2 would show the average for its column etc. I would love the name of each excel column (Answer from survey) to be on the left side of the chart. However I can't figure it out since every time I drag the question into the row tab it starts showing (1-5) and doesn't just keep the average of the column. Thanks!

After replicating and trying what you described, my suggestions is to drag "Measure Values" (from Measure list on the sidebar) dropping in the "Columns" tray, and "Measure Names" on Rows.
Then use Measure Names as a filter, selecting the questions.

I want to highlight Department and Org based on values in ratings column (1- yellow, 2- red, 3-blue)

Tableau by default will only highlight measure values so in order to highlight dimensions you need to trick it a bit.
First, you'll want to create two dummy columns with the formula min(1). You can either create this through a calculated field or just double click and type them in the columns shelf.
In the Marks card for each of the two new measures (not the All card), place Department on the text field in one and Org in the text field of the other. Set the Mark type to be Text on both of them.
Create a calculated field to define the colors. The actual values don't matter here as you'll assign a color to them latter. Put this on the All marks card on the Color Shelf.
At this point, you might have something like...
Now to finish it off you can do a few things:
Double click on the color squares in the legend to reassign them
Change formatting on the measure to get rid of the axis, zero lines, etc
Move the label from the bottom to the top by creating a dual axis.

From the Image I need to calculate % complete for the order number 1.
Calculation for complete will be
(total number of points for status 'Delivered' / total number of points)*100
The value should be 57%

SUM(IIF([Status]="Delivered",[Point],NULL)) / SUM([Point])
I assume your column named Order No. extends all the way down each row (i.e., each row should have a 1 as Order No. but the screenshot does not show that.
Also, the above only works if the status of "Delivered" is consistently cased, which it is not in the screenshot. If it is not consistently cased, wrap [Status] in an Upper function:
SUM(IIF(UPPER([Status])="DELIVERED",[Point],NULL)) / SUM([Point])
You can also get the effect you want, just by manipulating the Tableau user interface -- without needed to write calculated fields as #S. User18 showed. Both approaches work, but it helps to understand both alternatives.
As with #S. User18, I assume your column named Order No. is consistently filled in. I also assume [Order No.] is a dimension.
Place [Order No.] on a shelf, say Rows
Place [Status] on another shelf, say Columns
Place Sum([Point]) on a shelf, say Text
This shows the sum of the number of Points for each combination of the two dimensions: [Order No.] and [Status]
To convert the number of Points to a percentage, right click on Sum([Point]) on the marks card, and choose Quick Table calculation->Percent of Total
Similarly, right click on Sum([Point]) and experiment with different "Compute Using" settings to get the effect you want -- i.e. percent of each row, column, table etc. You can instead Edit the Table Calc if the preset Compute Using options don't get the effect you want.
Right click on any row or column headers that you want to hide - so if you only want to display the percentages for the Completed Status, hide the others. Don't exclude the others as that will change the calculations.

I am trying to get all my lines to overlap on a single graph. How would I go about doing this? Here is what I managed to get so far:

Each of the attributes (e.g. 'Intro', 'Flair') have the following integers in the data: 1,2,3,4 with an associated pcttip (tip percentage) as a decimal number.
I have manually right clicked on each of the measures in the columns area and changed them to "dimension".

You can do this in Tableau fairly easily. You need to pivot some of your data.
Click on the data source in the top-left and select Edit Data Source
In the bottom pane, where your data is previewed, select/highlight each of the fields that you want measured (Intro, Flair, etc.)
Right-Click with those fields selected and click Pivot
When you return to your sheet, you will see a new dimension field and measure field for your pivot.
Add [Pivot field values] to the Columns section - make sure this is set to 'Dimension' and 'Continuous'
Add [Pivot field names] to the Color card
Pivot
Output
Drag 'Repeat' pill to the X-axis on 'Intro' then drag the other pills into 'Intro'
