Is there an API in the iOS SDK that deals with text messaging?
MessageUI.framework is what you are looking for.
You can use MFMessageComposeViewController to show system composer for sms.
The MFMessageComposeViewController class presents a standard system interface for composing SMS text messages. You use this class to configure the initial recipients and body of the message and to configure a delegate to respond to the final result.

However, as stated in the iOS documentation:
Important: If an iOS-based device is
not configured to send a given type of
message, you should avoid displaying
the corresponding composition
interface. The view controllers in
this framework provide methods for
determining if support is available
for a given message type.
MessageUI.framework will work, and give you SMS and Email message capabilities
BUT
Note that this only works in iOS 4.0. Which means it will not work (currently) on the iPad.
MessageUI.framework will give you ability to compose and send SMS and Emails from iphone, but as per my knowledge there is no way to access SMS or Email from you native app to your app.

As far as I know its not possible, I have seen SO many of these apps on the store that basically just save as a picture and send as a picture.
As of now... in the SDK MFMessageComposeViewController doesn't support MMS.
Although you can render an image and send it.

They might send a request back to their server which sends an mms from there?

This is not possible with the current MessageUI API: the MSMessageComposeViewController doesn't accept attachments like the MFMailComposeViewController does.
The only way to do this currently is to use an external service that allows you to send mms via a REST call for example.

Try to find a local service provider that implements this specification and you're good to go.

Apple only supports sending of SMS text messages, use the MFMessageComposeViewController.
Since sms only supports sending plain text you can't set any format.
MFMessageComposeViewController does not support MMS, which would allow you to send formated messages.
Is there any way to block incoming phone calls, text messages and email. Will appstore allows these kind of applications on appstore. Please help me if this is possible or not.

CallKit introduces app extensions that enable call blocking and caller identification. You can create an app extension that can associate a phone number with a name or tell the system when a number should be blocked.

Apple will never allow any third party application to do any illegal things without user's knowledge. This is the policy I think apple has applied to ensure his user's that their data are safe in their iphone. U can consider mails, calls, sms to be under those categories. There may be others which I might have missed.

Even if it is called "smart", all in all your target device is a "phone" so the basic phone functionalities should not be ever blocked, and the phone manufacturers do not allow this for third party applications.
Rajan is correct you can block the incoming phone calls from iOS 10.
Create a Call Directory Extension , use the addBlockingEntry(withNextSequentialPhoneNumber:) method to pass the blocked numbers to the system.
Now it's end of 2018 and actually you can really do something with Apple's latest API.
As #Rajan stated, with CallKit API (iOS 10+) you can achieve call blocking and identification (i.e. show additional info on the incoming call screen for the caller's phone number).
You can also do SMS and Call Reporting (iOS 11+) as well, where you have access to the SMS content if the number is not in your Contacts.
I need to implement a message service into my app that works exactly like this:
users register with a nickname within the app
they can add contacts (just nicknames) and send them a message by just specifying their nickname
they can send a message whenever they want, and the message is stored on a server until when the receiver connects to internet.
when a message is received, a push notification is triggered.
So, the messages work pretty much like emails, however instead of using email addresses, we only use usernames. I'm also going to build my own back-end for it.
Which APIs should I use or which 3rd party framework can I use ?
And any tip ?
N.B. I need to make it work with iOS 3.0 as well.
and in the future I will develop an Android app, so the nicknames should be unique and I should be able to send messages from iPhone to Android devices within the same app.

I've successfully used the Three20 library and would recommend giving it a try. It's an open source spin-off originated by the author of the Facebook app. It features a bunch of additional GUI components that might be useful to your project, like a message composer that resembles the one used by Apple's email app.
Also, Three20 features a nice framework for handling navigation within your app. Currently, the biggest drawback seems to be that certain features don't play well with the iPad API.

I'm aware that accessing the SMS incoming isn't possible in the iPhone SDk but could i read the alertView that is active on the iPhone (ie. new SMS alert) and store its values into a variable? Obviously this would require backgrounding but in theory could this work?
As other stated, you cannot see the SMS message or associated alerts.
Not sure about iOS, but on other platforms (e.g. Java ME) it is possible to address an SMS to your application instead of the phone's "inbox" (default handler). This requires that you control the server sending the SMS message.
I imagine even if you could catch an SMS targeted at your iOS app, you wouldn't. Instead use Apple's Push Notification system.
I hesitate to type this in an iOS related question, but the Android OS makes it pretty trivial for an app to see SMS messages. You can even be woken up as they arrive. So, if you just want to test out some idea you have, consider that.
No. You can access your own alerts but not those from other applications.
Unfortunately, you cannot access other application's data, be it in background or not.

In the long answer, I believe with version 3.0 you can have your app subscribe to Apple's push notification service. Meaning that you can have your app answer to a notification from Apple that you send. Not quite SMS, but it accomplishes the same thing.
