Everytime I get a call my old wallpaper shows even though I have a new one. I'm trying to find it on my iOS but I cannot seem to figure out where. So I'm trying to track down what folders gets backed up when i backup my iPhone since I have restored it and it's still there.
(I'm using a jailbroken device)
I know this isn't the actual folder names and etc but it will give you an idea what it's backing up though. Good Luck.

All user documents and settings get backed up, Application settings as well as system settings.
Applications each have a Documents folder that user data can be saved to, so thats pretty much what gets backed up for applications, including app preferences.

I have manually managed to find out what gets backed up and managed to solve the problem :)
I downloaded the trial of iphone packup extractor http://www.iphonebackupextractor.com/ and found what I was looking for.
Also it seems like I just had to change the lockscreen in the iPhone since the file called LockScreen.jpg was the picture I was looking for but since I had another lockscreen using winterboard I didnt think of this.

I worked on app in which user can add images and make notes about those images, which i stored in sqlite and i store cards in document directory. I have enabled file Sharing option in app so user can keep backup of app's data manually in her PC via iTunes.
Please consider this scenario: the user connects the device from time to time to iTunes, and the synch process takes place. however, she does NOT go into the File Sharing option which is one way to backup manually the data in PC. now, she drops the phone in the bathtub and it does not work or due to some other reason she lost her device.
my question: when she gets a new phone, can she recover her data?
if yes, then how could we do this?
if no, then what is the correct way now to backup the third party app data.
If a user installs an an app which uses iCloud with a UI(Managed)Document, then uses the app, creates data which is saved to iCloud and then deletes the app on his phone, the iCloud data will stay on the device (transaction logs etc.). If the user reinstalls the app it will try to use these old files.
I have the following two problems with that:
The iCloud documents could have changed in the meanwhile and there might be problems when the user has no network connection on the first launch after reinstalling the app.
The iCloud documents for this app could have been deleted by the user (via settings or in Mac OS Finder in the user library). Now, when the user has no network on the first launch after reinstalling the app, the app might think that there is an ubiquity container with data even though it's already deleted (app might crash).
This is not very easy to test but I have definetely crashes and malfunctions for those two issues. E.g. NSMetadataQuery shows me results for documents which do not exist in iCloud because they have been deleted (but they existed on the deletion of the app).
Is there any easy solution to this? I thought about deleting the local iCloud data on the device when the app is launched for the first time - but how can this be done?
It can't be done. If you delete an iCloud document locally, you delete it everywhere-- eventually. The iCloud APIs have no concept of managing local copies independently of the iCloud service, so if you delete one-- even with the network down-- the iCloud ubiquity daemon will send a delete command to the service at the first opportunity.
The closest approximation that current APIs would allow would be:
Check whether the network is reachable
If it's not reachable, do not attempt to access any iCloud documents (because as you note, the information might be stale).
If and when the network comes up, try to open all existing iCloud documents. (On iOS, iCloud updates are only downloaded on demand, so you need to create that demand).
If that's not good enough (and let's face it, it's not good enough), file a bug with Apple and hope for the best.
My App can work with or without iCloud support.
If a user connects a device to iCloud and then wants to disconnect it, it's pretty easy for me to copy all data back to the local sandbox and stop using iCloud, and this device won't contribute anything new to iCloud anymore. However, changes from other devices will still be received (although not handled) on this device.
Is there a way to completely disconnect the device from iCloud, so that new changes won't be received?
iCloud stores data in a folder called "Mobile Documents." Your app's container resides in this folder. iOS devices know about new files and changes immediately. However, they do not actually download the file until the app specifically requests it. Here's an example scenario:
Someone is running your app on their iPhone and their iPad. They use iCloud on both. However, on their iPhone they disable your app's iCloud but leave their iCloud account active. This means that their device always knows about changes. But since your app never requests those documents, they are never downloaded to the device and therefore do not take up space. Also, iOS will automatically remove the local copy of an iCloud file to free up space if necessary.

You can simply stop responding to the NSNotifications received by your app. You can either unregister your views from these notifications, or ignore them when they're received.
If I'm not mistaken (and if I am mistaken, here or in what I say below, please correct me), non-jailbroken iPhones provide two broad areas of storage space:
for apps (and data that comes bundled with apps);
for user-managed files.
I understand that the former is protected storage, meaning that data bundled with an app and stored in that area is not accessible to the user except via the app.
On a jailbroken iPhone, does this protected area still exist? If so, what protections remain; i.e. is data stored within it still inaccessible to the user?
On a jailbroken iPhone the user has full access to all resources. The user will have more control over the device than any developer. There is no place to hide secrets on the device, even memory is accessible.
Even on a non-Jailbroken phone it's easy to extract the user data from the backups that iTunes creates when the user syncs (unless the user specifically enables the "encrypt backups" option).
The apps themselves are nominally encrypted using iTunes DRM, but since you can download apps in iTunes on a desktop and (AIUI) easily remove the DRM, again, even users without jailbroken devices can access your resources.
You have it backwards:
Third-party apps are sandboxed so they cannot access "protected" data, including some system data and other apps' data.
System apps tend to not be sandboxed and have extra privileges (they might all do). For example, App Store has to be able to upgrade other apps, and exploiting holes through Safari was one way to root a phone (suggesting Safari runs as root).
Nowhere is app data protected from the user. Instead, Apple apps do not expose the filesystem (and third-party apps can only expose a small portion of it).
Additionally, the "two areas of storage" are actually / (more or less the firmware image) and /var/mobile (more or less the user data partition). AIUI, upgrading the OS overwrites / but leaves /var/mobile intact; this is how a normal upgrade manages to preserve all your data without a long backup/restore process. IIRC, system apps are in /Applications and third-party apps are installed to /var/mobile/Applications.
I'm not sure what category Apple apps distributed on the App Store fall under (iBooks, Remote, Pages/Numbers/etc).
i want to create a application which sync my iPhone contacts to my server and vice-versa.
i read a article on google Get Google Sync on your phone . i want to this type of feature which directly update the contact without user interaction (however one time setting is desired).
any body have idea how the google sync work .

I think it's important to separate the two overlapping approaches in your question.
Firstly, Google Sync is essentially a way to use Microsoft Exchange protocols and to setup a Mail / Contact / Calendar profile on an iPhone. The iPhone OS supports this feature, not an iPhone App in the App Store. Google Sync leverages this fundamental capability of the phone by exposing the data (mail, contacts, calendars) via these known protocols. If you want to expose data in this way to your users, setup a Microsoft Exchange server and ask questions on serverfault.
Secondly, there are iPhone apps. iPhone apps sold in the app store are not currently allowed to run in the background. This means you can't emulate functionality like iTunes or Mail where your music plays while you are browsing the web, or mail checking is done while you are playing a game of Mini Squadron. If you want this backgrounding capability, file a bug/enhancement with Apple.. However, you can interact with iPhone contacts (Address Book) via the API.. You can also of course "re-invent the wheel" and expose the data however you like via the internet, and consume that data from a custom iPhone App with the one caveat that users would need to actively launch your application to get to this data and it would not be integrated with the built-in iPhone Calendar, Address Book or Mail applications. Some good examples of that are some of the music community apps that have messaging systems built into them. Presumably that is all being done with web services.
EDIT: It is also worth mentioning that should you go the "iPhone App" route, you should at least consider if push notifications are right for you, and if so how you will handle it.

As slf told you your application must run in foreground. This may limit you.

The 3.0 SDK will allow your application to read contact data on the phone.
Web services will allow you to publish that data to your server, and receive updates.
You may also want to use coredata to store a hash of all contact data so you can tell what is new / updated and just send that data to your server.
