Does anyone have any insight, experience/links they can point me to for adding ads to an app I'm building on the PhoneGap platform?

Depending on which platform you are looking for, there are different implementations. You can go with a purely web-based approach (integrating google Ads, for example). Given you tagged it with iPhone, I guess you are looking for an iOS solution?
If so, check out the AdPlugin available on GitHub. It is a bit of objective C and a bit of JavaScript that allows you to integrate native iAds into your phonegap-iphone app.

I'm building an web application with react-native.
In this app I need to gather some information about users.
One of them is how much time they spend on other apps installed on their phone.
I couldn't find any library for this job, so I've decided to write the native code my self.
For android, apparently there is this UsageStatsManager that can help me achieve what I want.

It is asking for permission to gather other apps data. SO IT IS POSSIBLE?

There is no API by apple itself for retrieving data of third party applications. This is called "Sandboxing" where applications are restricted from changing the device settings or retrieving/changing other apps data. Hence, why iphones are secure.
What you have shown in your screenshots is to track application data for personalised ads and such. This can be achieved using the AppTrackingTransparency framework provided by apple. You can read more about the framework here.

Me and my friends are starting app development. We have created 2 apps now, and have 3 more in the works. We're looking for a development tool or environment that will allow us to build games that works on all the major handsets. We're using Flash at the moment for cross-platform, but are there any better and more powerful options?
Or would it be best to write the code in one language, then convert it line by line to the others? How do the creators of games like Angry Birds do it?

Out of all these mentioned tools i will recommend PhoneGap.

My friends are using this for making games , and am a designer so not much into programming of that. But still as far my friends say this is good for most of the applications, though there are very few things which cant be implemented.
My friends have created a utility app and a game tic tac to using this.
For developing games i would recommend Corona.
For a native feel and look i would recommend Titanium
For fast and simple development and using html/js i would recommend Phonegap
You should also check out Worklight from IBM. You can easily download the fully functional development tool from their developerworks Web site. The only restriction is that you can't use what you write for a production version. Their tutorials are great and escort you comfortably through the short learning curve.
I'm a Titanium Developer, I find this framework great because it gives me the chance to develop cross browser mobile with Javascript. This is a big advantage for people that have Web Developing background like me. If you are gonna develop basic cross browser application und you will do it quick (and if you have javascript know-how), then appcelerator is good for you!
I am using Titanium appcelerator for developing my android application, more over i am newbie to handle both of this together, even though i have made some digging to find some resources to start up with this, i am finding some difficulties in my first try.if anybody have resources that helps me move on further, please let me know...

Yes, titanium appcelerator apps can be packaged for the iPhone, and will work nearly the same as on android.
To do this, you need a Mac computer and the iPhone SDK (download from Apple). I believe you also need to pay Apple US$50 to deploy your own app to the phone.
If you want to put it on the App Store, you will need to submit it for Apple's approval.

As far as general coding goes, I found the Twitter client example helpful.
So in previous questions about iPhone development on Windows, the basic/easy answer has been "just get a mac." However, I noticed a comment that mentioned DragonFireSDK. But no one else said anything about it?
Has anyone tried this? It look pretty legit to me, but I'm new to the iPhone world. I just find it weird that no one has discussed this yet. I mean, it looks like the perfect tools for the Windows users.

Yes, I use DFSDK and got my apps published to apples appstore using the sdk. they have good API it lets you use c/c++ to create your app.
I want to implement Omniture tracking in an iPhone application. I just have a basic clue on Omniture, that it is third party software that helps you to track keyword searches by your users in your application, and it also helps to present similar searches to the users, and helps reporting. Please correct me if I am wrong as I still digging information on it.
I want to implement the same iPhone form in my application.
I have googled for the information about Omniture tracking, it is scare and there is no help as to how to implement it in an iPhone application.
Can any one guide me how it is done and how to do it iPhone?
I can't give much advice if you're building a native Objective C app, other than to say you should read Omniture's iPhone implementation guide. If you're building an embedded web application, and given that you want to integrate keyword search suggestions, I don't think you have much of a choice, but I'd recommend using their regular JavaScript library the same way you would if you were integrating Omniture into your web site. The js engine on the iPhone is fast enough that you probably won't notice any degradation in performance and the memory footprint's not that big.
It sounds like you only want to use Omniture because it's the one you've heard of. There are other tracking solutions like Flurry and Google Analytics that both offer iOS SDKs and are easier to implement and easier to find documentation about than Omniture.
I recommend Flurry personally as it gives you more device-specific data that Google does.
