Does paypal support any sort of variable transaction? where the receiver of payment is a variable?

All of the merchant tools use an internal paypal user id instead of a plain email, which is fair enough as they are merchant tools.

... which is just a simplified GET version of the (non-encrypted) PayPal button interface POST. Pretty much all the same parameters that you can put in the POST can be used in the GET.

You can send PayPal Invoices to people using the Invoicing APIs. For that you may be interested in our PayPal class library for PayPal, which makes those API calls very quick and easy.
Alternatively, you could build a more simplified money request by just generating a PayPal Standard payment URL using the variables outlined here. Then you could have that URL be a link from any button or trigger you want.

Anyway, as I said we have this all working fine when someone is sending US the money. However, we also have a tool on our site where "customers" can send money to sellers. For this, we currently have the Adaptive Payments system.
My question: How can we use the PayPal Checkout tool to let people send to a given email address, while still getting the callback for the order? (so we can enter it into our system, to track it)
At first I thought this wouldn't be possible - but I've seen this exact same logic on eBay:
Is this something that is publicly available? Or is it just a "PayPal-Ebay" thing? (as they are effectively the same company, so maybe have access to different tools than the general public do)

Using this, you can set the money to be moved to whichever paypal account you like with just the email address.
The PayPal Express Checkout v4 is based on PayPal Rest API which does not support spliting or sending payment to a given PayPal account that is not the API caller. Adaptive payment is the right to do so in PayPal. The PayPal checkout on eBay is only for eBay, the checkout experience may look similar but it's using different product than the Express Checkout v4.
The basic integration lets you set up a button for a merchant using only their client id:

So if you can collect the merchant's client id, you can set up a button to make payments to that merchant.

I have integrated PayPal into my website and have the IPN system working successfully. The problem I have now is that unless the PayPal email is the same as the one they used to register on my site, I have no idea who the person is.
I would like to add on my own data to the IPN message such as AccountID=10 or AccountName="SomeName" so that I can identify who the person is for my own user base since it is selling of virtual goods and privileges and not shipping to some address. Can this be done?
You certainly can send many parameters such as invoice parameter with your Paypal IPN request and get it returned with IPN response.

Is there a way to use the paypal API to send basic details of a payment without actually creating the payment itself? What I mean is, I'm working with a non profit organization that does not currently employ SSL. They want to use paypal to accept donations, but they want their own branded form on their page, they don't want to use the simple donate button. I had thought I might be able to send basic details, such as name and address along with the amount they wish to donate and a few other details using the paypal API, and then have the actual payment information processed on paypal's secure servers. All the examples I can find on how to use their API however are creating complete payments and sending them to Paypal, something I'm not able to do for obvious reasons. Short of employing SSL, something that we should probably do anyways, and capturing a complete payment, is there a way of sending just select information over the API and handling the rest on paypal's end?
If you want to control the form itself you don't have any choice but to go SSL. Any other route would require sending the user to PayPal, where you would no longer have that control.
It's not a problem but i don't know how to do this; let's say that I have a sign up form with some fields: username, password, email, as you know the user clicks on the BUY BUTTON and pay's up.
Well, how can I know the username that just made the payment, I mean how can I link those two things together, one idea it's to use the email address, but mose of the people sign up with different email addresses, mabe they have a different paypal address...you know...I need this information because I need a way to activate the account.

If you do, the e-mail you will be looking for will be supplied in
$paypal->ipn_data['payer_email']
(again, assuming that $paypal is your object of the paypal_class class)
Obviously you have to follow the setup steps first. I suggest using the example script. It is really easy to do - in only four steps.

PayPal issues a IPN for every event that occurs to the user subscription, for example:

About the parameter, you can use a parameter named "custom" to pass a value, for example the user id or email, and that parameter will be sent you in every IPN.
